June is Pride Month! Pride Month has been an opportunity to celebrate members of the United States who identify as lesbian, gay, bisexual, transgender or queer (LGBTQ). These celebrations may spotlight triumphs overcome, social justice advocacy, family relationships, community inclusion and love. It also gives everyone the chance to learn about disparities that many LGBTQ individuals face.
If you have ever seen or partaken in any Pride events, you are likely to see rainbows-and lots of them! The variety of colors represents the diversity and power of the LGBTQ community. And if you plan on celebrating any Pride events, why not make your foods match the rainbow theme? A great place to start is with having a range of brightly colored fruits and vegetables at your gatherings. Below is a list of vegetables and fruits by color to help inspire you to eat well and show your Pride support. Not only does having a variety of colorful produce help you celebrate Pride month, it also helps you get lots of nutrients from different foods You can use them on the grill, in salads, on skewers, and even fresh with a dip or dressing! Vegetables:
Red/Pink: rhubarb, tomato, pepper, radishes, radicchio, chili pepper
Orange: sweet potato, carrots, butternut squash, pepper, oca, pumpkin
Yellow: spaghetti squash, yellow squash, corn, pepper, yellow beets
